All restaurants are open to resort guests and to dinner reservations. Our kitchen garden supplies most of the herbs, figs and citrus you will eat, and the fish arrives from Qusar’s own harbour each morning.

Azerbaijani, reconsidered

Our kitchen begins with the food of this coast: mountain herbs, Caspian caviar, dried apricot, pomegranate molasses, and charcoal-grilled lamb from the Sheki highlands. Nothing is recreated so much as refined.

    Sturgeon, ash-roasted

    Azerbaijani sturgeon buried in embers, opened at the table, dressed with smoked butter and dill oil.

    Qvevri-aged lamb

    Sheki lamb matured in buried qvevri, served with charred leek and green-walnut sauce.

    Caspian caviar service

    Beluga, oscietra and sevruga with warm blini, buckwheat and elderflower.
